  • History of the Tart

    Tarts have been made in every province in France since the Middle Ages (le Moyen Age). Often composed of a flat, round pastry and garnished with fruit or cream, each region has its specialty: La Tarte Bourbonnaise from Bourbon, savory bread-based tarts in Alsace (the pizza-like flammekueche), fruit-based tarts like the Tarte Tatin (Val-de-Loire), cheese-based tarts in Corsica, and more.

    The Tarte Bourdaloue consists of a sweet pastry called a pâte sablée (a bit like a shortcrust), an almond cream called frangipane, fresh pears and slivered toasted almonds. The Bourdaloue tart that we know now, with pears, did not appear until the end of the 19th century and has little connection to the original version. The Tarte Bourdaloue gets its name from the street in Paris where a pastry chef invented it in 1860.
